Winemaking
The fruit was hand harvested and partially whole bunch pressed. The cool fermentation was stopped when the sweetness and acidity were in perfect balance. The wine then rested on fine lees for two months to gain texture and palate weight. The acidity, texture and minerality of this wine interplay harmoniously.

Palate
Delicate and pure with a beautiful pithy texture, orange blossom and ripe citrus flavours.
Bouquet
Tahitian lime, honeysuckle and nougat are mixed with slightly spicy and savoury cashew nut notes.
