Winemaking
Hand-harvested fruit underwent wild fermentation, with 15% whole-bunch inclusion to enhance aromatic lift, texture, and structure. The wine was matured for 10 months in 4,500L French oak cuves, before being bottled without fining or filtration – a minimal intervention approach that preserves character and integrity.
