This Southern Valleys Riesling is complex, packed with ripe fruit, stony minerals and a zingy acid backbone, lengthy and moreish with a saline lift on the finish.

Winemaking

Fermented cold in stainless steel to retain aromatics and purity. The fermentation was stopped when the sweetness and acidity were in perfect balance. The wine then rested on fine lees for five months to gain texture and complexity.
